Sourced from 32 year old vines on our Uley vineyard, grapes were hand picked on March 2 at a Baumé of 12.9°, pH 3.63 and titratable acid 6.3 g/L. Initial processing (destemming) carried out by a ‘Dad’s Army’ of Lindsay and his mates Noel, Dale, Ed, John and Neville. Cold maceration for 4 days, fermentation in small open fermenters, maturation in new and used French oak barriques and bottled Feb 2, 2016. Unfined and unfiltered, alcohol 13.5%
Still young, this wine displays a fresh crimson colour with cherry and bright berry fruits along with spice, smoky and sappy characters. Fine structural tannins support the smooth and lingering palate. Should mature and improve over at least 7 to 10 years.
