Grapes were hand harvested on March 22nd from 13 year old vines on our former Bonython vineyard cropped at approximately 2 tonnes per acre. Average Baumé 12.8 degrees, pH 3.63, titratable acid 7.8 g/L.
The juice and skins were fermented in small open fermenters over 2 weeks and the resulting wine then pressed to tank for settling before transfer to new and used French oak barriques for malolactic fermentation and maturation over almost 2 years. Bottled 8th March 2012, unfined and unfiltered, alcohol 13.5%.
A complex nose of mulberries, blueberries, savoury olive notes, earthiness and chocolate is followed by a soft palate with fine tannins, good length and balance. Despite its age at release (7 years), this wine continues to develop and has potential to age for some time yet.
